So I breezed through a non-gun related forum and a guy posted about dry aging beef based on a video from this guy.

Man I want a steak now.

The pics from his attempt sure looked like the real deal.

Unfortunately I don't have one of those vac machines.

I have dabbled in refrigerator dry aging and certainly don’t want to discourage you, but my experience was if you start out with the best cut you can find you get the best end product. Dry aging really is only worth the effort in the home refrigerator setting when you are trying to improve upon a less than ideal product(note I am only referring to home single cut aging as it has little connection to true dry aged)
I think time is better spent procuring the quality beef to start with ideally from a butcher or producer you have developed a relationship with.
Just my opinion....but it is an opinion rooted in raising beef and grilling steaks for a few years.����

I've not done anything to that extent, but often leave ribeye or thicker NY Strips in the fridge with kosher salt on one side on a drying rack for a day or two before grilling them. Definitely makes a difference, but as glockednlocked said:

Buy good meat to begin with.

One reads of not just beef, but of game birds being aged and I am interested in it. It was originally done in a non-refrigerated setting in western europe, but during the long florida summer that is not an option. I would enjoy seeing more postings on the subject.

We have a walk in cooler at one of my hunt clubs. Some of us age our deer carcasses the same as beef. Then have it processed and vacuum packed.

I refrigerator dry age all the game birds I take. I think it makes a significant difference.
