The hardest part of eating Paleo for a lot of people is figuring out what to eat after you cut out all the bad stuff. I figured it would be helpful if we had a thread for everyone to post their favorite "Paleo-ish" recipes. If you have a favorite Paleo recipe or meal, please post it. I'm always looking for ideas for variety.
Here's an Israeli egg based dish called Shakshuka that I make for dinner when I don't feel like firing up the grill or don't have enough meat in the fridge. I don't usually use a recipe for this, and I usually throw in a few more vegetables, but here's one that's pretty close to the way I make it.

I think feta cheese is traditional for this dish, (and yes I know cheese is not not strictly Paleo - so sue me), but I like to use blue-cheese when I have it.

Im a big advocate of making a dozen eggs at a time in a muffin tin for paleo-ish breakfasts all week. Throw in whatever you want - cooked bacon, ham, sausage, onions, peppers, spinach, sea salt and pepper to taste. I usually throw in a little organic cheese, too.

Cleanup is a little easier if you use the cupcake cups, otherwise just use some coconut oil to grease the tin itself. I use eggs, bacon, kale, spinach, onion, garlic, lemon, and a little chili pepper/flakes.

Could you post some instructions on this? I like having pre made breakfast stuff around, and something that is healthier would be nice.

Ingredients
12 large eggs, hard boiled and peeled http://s3.amazonaws.com/cdn.shopximity.com/images/play.png
1 cup mayonnaise
1 1/2 tsp rice vinegar
3/4 tsp ground mustard
1/2 tsp sugar
2 jalapenos, seeded and chopped
6 pieces bacon, cooked, crisp, and crumbled

~Instructions
Slice the hard boiled eggs in half, lengthwise
Remove the yolks and put them in a mixing bowl
Mash the egg yolks with a fork
Add the mayonnaise, rice vinegar, ground mustard, and sugar to the mashed egg yolks and stir until well combined
Mix in the jalapenos and bacon
Put the mixture in a ziploc bag and cut a small hole in the corner of the bag
Fill each egg hole with the mixture
Sprinkle with paprika
Chill until ready to serve
For the paleo "cup cakes/muffins" you just line a muffin pan with bacon. Cook the bacon about ten minutes, then crack and egg in it and cook till done. If you want to get fancy you can scramble eggs in a bowl and add cheese or anything else and then pour it into the bacon lined muffin pan.

This wouldn't be my favorite recipe, but it is pretty good and I invented it, though maybe others came up with it independently.
Paleo Pizza
1. Take ground beef and flatten it over a cooking tray. You do this like you are making brownies or something similar.
2. Cook it until it turns brown.
3. Cover it with your desired amount of tomato sauce or pizza sauce.
4. Add whatever cheese or cheeses you want.
5. Add whatever meat toppings you want like more ground beef, sausage, pepperoni, ham, bacon, etc. For ground beef and bacon I'd cook it before putting it on the pizza.
6. Cook it until it looks finished.
You'd need to eat this on plates and use forks. The ground beef "crust" doesn't stay together like actual crust and it will fall apart if you try eating it like normal pizza.
We call it "SSS" or squash, sausage, and sauce - it's basically paleo spaghetti
Cook a spaghetti squash (paleo? dont' know but I'm pretty sure this is low carb), carve it out and serve it hot with butter and grated parmesan then on top we put tomato sauce (marinara or whatever spices ended up in the tomatoes) and cooked sausage on top. For the sausage we typically use loose pork burger but also have chopped up brats or turkey burger, the list goes on... Not sure where this came from, may have been the Primal cookbook.

Gonna try that casserole and those deviled eggs. Alex has a very good paleo chili recipe, too. Maybe he'll post it again. If he doesn't I'll get it from the wife.

I've made most some of these. Nuke a couple or three in the morning. Really easy breakfast. I also use a 24 cupcake baking pan, so I can eat a few before the kids eat them all.

That would be "meatza" and it's a staple at our house. Best prepared in a cast iron skillet, pour off the grease after its browned, then add toppings and cheese.
Easy and very filling.

Some of my favorites are Paleo TexMex Casserole (http://paleogrubs.com/tex-mex-hash-brown-casserole?awt_l=TmGzY.&awt_m=3cknjKhSZrcmO.x) (I subscribe to Paleo Grubs emails, and they have tons of good recipes), Crock Pot Pulled Pork and Unstuffed Cabbage Rolls. I also like Alex's Carolina Chili.
Crock Pot Pulled Pork
3-4 lbs pork roast
1 onion, sliced
1 small can chipotle peppers in adobo sauce
1/2 cup BBQ sauce
1 can beef broth
salt and pepper
2 tbsp olive oil
Add olive oil to bottom of crock, add a layer of sliced onions, then add roast. Salt and pepper the roast. In a bowl or pan, combine peppers and adobo sauce, BBQ sauce and beef broth. Pour over roast and cook on low 4-6 hours (depending on crock pot). Remove roast when done, shred w/ fork. Strain remaining juices from crock pot and add just enough to thoroughly moisten the pulled pork. Delicious, and has a little kick to it, too.
I served it w/ cooked carrots and sliced avocado.
Unstuffed Cabbage Rolls
2 lbs ground beef (I used ground venison; you can also use ground turkey.)
1 large onion, chopped (substitute minced onion, if desired)
2 cloves garlic, chopped (substitute minced garlic, if desired)
1 small head cabbage, chopped
2 cans (14.5 oz) diced tomatoes
1 can (8 oz) tomato sauce
2 tsp salt
1 tsp black pepper
1/2 cup water
Heat a Dutch oven or large skillet over medium-high heat. Cook and stir beef and onion in the hot Dutch oven until browned and crumbly, 5 to 7 minutes; drain and discard grease. Add cabbage, tomatoes, tomato sauce, water, garlic, salt, and pepper and bring to a boil. Cover Dutch oven, reduce heat, and simmer until cabbage is tender, about 30 minutes.

Something else that I've changed since starting Paleo is that I notice that I'm making a lot more stew's and soups. A lot of Thai and Indian recipes are pretty easy to convert into a soup or stew by changing the proportions.
Grilled bone-in pork chops
red cabbage with diced apple
steamed broccoli
Optional -
White wine of your choice
Fresh berries and whipped cream

Jon, I made this today. It just sounded like the right chow on a day when both the snow and the temps are falling. Used some Iowa pheasant and some Texas pig sausage. Enjoying it as I type this. Delicious.

Paleo-ish Thai chicken chili basil stir fry. This is a fairly authentic dish but, in place of rice or noodles I substitute red and green shredded cabbage. I'm not hardcore paleo so I don't mind using traditional ingredients in small amounts. Most folks will probably want to pair this with a cold one if you go heavy on the chili paste.
I don't measure, but these are probably pretty close:
For the sauce:
2 to 6 Tbsp Sweet Chili Basil paste depending on how hot you like it.
2 Tbsp Thai fish sauce (I used Three Crabs brand)
2-3 Tbsp soy sauce
2-3 Tbsp Oyster sauce
3-4 Tbsp water
Everything else:
3 Tbsp Avocado oil
3 Tbsp Coconut oil
5 or 6 cloves garlic smashed and coarsely minced
2 medium yellow onions, chopped
2 cups each red and green cabbage finely sliced
1.5-2 lbs of chicken diced in 1 to 2 inch pieces
Get everything chopped before hand and pre-mix all the sauce ingredients because this cooks quickly and you'll be stirring pretty much constantly.
1. Heat a wok on high until the oil starts to smoke
2. Toss in the onions and cook for a minute or so, stirring often
3. Add garlic and cook for 30 seconds
4. Add the diced chicken and cook until the pink is nearly gone. Probably about 3 or 4 minutes.
5. Add the sauce and cook for a few more minutes until the meat is nearly done.
6. Add the cabbage and stir fry until the cabbage is tender to your preference.
