Ok Ladies and Gents, could you help me out with some kitchen knives. I want to get a quality 8" Chef knive, a paring knife and perhaps some more in the future. Would love some recommendations from anyone who enjoys cooking and quality knives. I have been eyeballing a couple of Wusthof Classic's as well as some Globals. Any help is always appreciated.

I am here to chew bubble gum and kick ass, and I am all out of bubble gum.

Price range? Cutco is nice and they will resharpen them free for life.

I am looking to spend 200 to 300 hundred on the two or three knives. I have looked at the Cutco's and I am not really sold on them.

I am here to chew bubble gum and kick ass, and I am all out of bubble gum.

Price range is a big thing. I have a shun 10" chef that I use daily. They are great, just don't abuse them, and definitely dying try to cut through bone, they have a very thin, hard and brittle.

I'd personally stay away from cutco. I don't think their knives hold an edge for anything.

Wustof or henkles are some of the best kitchen cutlery on the market. Both have an over the counter replacement no questions asked policy, last I knew..

Look ag the KAI/Shun 7 piece set. Great blades, superior value.

I was given a Wustof several years ago. A few licks on the steel brings the great edge right back. Also have a cheap 4 or 5" santoku style that's actually done well. Were I to buy another chef's knife, it'd probably be a Wustof, but in the santoku style as things like potato slices don't stick to the blade so tightly.

Look ag the KAI/Shun 7 piece set. Great blades, superior value.

Was a good starter set for my XO, she immediately grew it. Excellent blades!

I see that some kitchen knives these days are ceramic. Are any the above knives ceramic? The few cheap ceramic knives that I have had were brittle and I broke them, but they were sharp.

Wustof (trident) but be sure its the German Steele. They and Henkel s both have a low end "international" line made of Chinese junk metal, you don't want that.

Sabatier with the Lyon is nice, but it seems like every knife from France carries the name rather they are decent or crap.

I would get the full tang Wustof...in fact that's mostly what's in my kitchen.

Thanks for the suggestions. I was about ready to pull the trigger on some Wusthof's but the more I digged the more it seems like the Japanese have the superior product here. I know at my price range I won't be getting the absolute best from the Germans or Japanese, but I definitely want to get the most bang for my buck.
