Family feast this weekend. Two nice pork loins from a pasture raised pig.
Brine 1 – salt, salt, salt , ice , juniper berries and pepper corns oh and some salt
Brine 2 - salt, salt, salt , ice and grade B maple syrup boiled down by the wife’s family in upstate NY – maple syrup secret grade B is the dark stuff that’s less ‘desirable’ but it’s got much more flavor than the grade A
Two smokers are standing by with a pile of oak and apple and pear wood.
I plan to spend Saturday with my butt in a chair on the porch occasionally hobbling out to add wood chunks to the smoker. Zombie hoard I mean family to arrive ~ 5 pm to begin pork consumption ….

I used to chow pork products, and yes, bacon is awesome. Smoked Rib and Ham veeery nice. But because of Religious beliefs I maar abstain from it. (and no, I am not a Jew) Dont mind other people chowing it, used to slaughter them at Abbatoir, dont mind frying them etc. just dont eat it.

There is something just shy of being Sacramental in preparing your own farm raised meat and feeding it to your family and friends on a Holiday. We just had a "surprise" bull calf born last week. I have not been able to get out much and did not even notice Mama was carrying. Beef cattle are close to no work in the summers. My nephew has been tending fence line and such and he did not notice. Middle granddaughter is 16; this beef will be ready for her high school graduation picnic. 2017.

Cant agree more. A person knows exactly what that animal has been chowing. Meat also taste differently from one district to the next with the grass change. I dont digg beef so much anymore, but mutton, I can eat that all day long. We normally go and shoot the sheep at 4-5am in the head in the veld where they are grazing, so no stress nothing. Found that the best for beef aswell. Normally much more tender.
