Any desire for SCUBA diving? Okinawa was some of my best diving, and I'm sure just about any of the Pacific island destinations would be an unforgettable trip. Or hitting Japan for a Mt. Fuji climb, lively nights in Tokyo (Rappongi). I was going to suggest Patagonia/Agrentina- you have the Falklands on there already. Costa Rica is supposed to be great for hiking/outdoors adventure, and not as commercialized.

Australia or New Zealand. Both are beautiful countries that I enjoyed. And if I'm not mistaken, NZ offers some fairly spectacular hunts, with no specific seasons.

My wife and I went to Vienna, Budapest, and Croatia. Phenomenal trip! Vienna was, frankly, just OK; a major European city, pretty clean, pretty safe. Highlight of that portion of the trip was a 20 mile bike ride through the Wachau Valley along the Danube.
I have now been to 37 countries in my life; Budapest is, by far, my favorite city in the world, Tokyo being second, for very different reasons. Hungarian food was awesome, the people were friendly (like fall all over themselves friendly, especially if you made any effort at all with their difficult language), the architecture was really interesting, with a midieval castle and cathedral directly across from the gothic Parliament building, both within walking distance of hold overs from the socialist era. Oldest operating subway system in the world... but most of all, I love how they take pride in their unique heritage, especially since as little as 80 years ago, almost no one spoke Hungarian.
Croatia; while none of the cities individually surpassed Budapest, as a country, this one was tops for me. We rented a car in Zagreb, drove to the northwest corner of the country to a town called Rovijn, with a distinctly Venetian feel to it. Then we drove down through the mountains and along the coast for a couple of days in Zadar. The Adriatic was beautiful. The highlight of the trip was the spru of the moment decision to visit the Nikolai Tesla memorial center, just outside his birthplace in Smiljan. It took about an hour or so to find it, but it was absolutely worth the effort.
My wife and I were planning our return before we left.

I've been to 3 of them, 2 extensively (read that as once a year for the last ten years)
1. Kilimanjaro- I'll give you more info than you can possibly want.
2. Kathmandu/Everest Base Camp- See above and you should at least fly to Lukla and trek to Namche for the 'full experience.' If you stay in Kathmandu you'll probably stay in Thamel most of the time, excluding excursions to Swayambhunath (google monkey temple), and Bhaktapur, which will not be the vacation you had in mind.

If money is no object there aren't many peaks in the world where an entire family get go, have a pretty good time (providing they like camping) and be relatively safe. That being said, it's one of the most expensive vacations you'll ever take. Don't forget to add a safari AFTER you climb Kili, and for that you should stay at the SOPA lodge (it's where the president of Tanzania stays when he goes there, Bill Clinton as well)

Went here for our 10th anniversary. Not exotic, exotic, but you can get a condo just feet from the ocean at the very end of the road on the far northwest side of Kauai. Beautiful drive on a curvy one/two lane mountain road and beautiful sunrises. Such a lush, green island that is still rather undeveloped compared to Oahu and Maui, especially this far north.

I went to Mozambique for mine. If you go in July/August, you can see humpbacks playing in the mornings and snorkel with whale sharks in the afternoon. Great SCUBA diving, and you'll love the exchange rate.

I second Okinawa, shallow warm green seas. Also JeJu island off of the tip of Korea.

We thought about some almost deserted island/beach in Australia but decided the trip and flight time was just too much. Ended up in Key West and thoroughly enjoyed it, it is barely recognizeable as America and exotic in it's own way. Stayed in a B&B style hotel next to the Southernmost.
