Recently purchased a Traeger pellet grill to supplement my BGE and offset firebox smoker, and decided that it was time to try my hand at hand built pizza. Hand made crust, fresh mozz, smoked provolone, fresh roasted red peppers from the garden, and imported pepperoni. First attempt turned out wonderfully! (I need some practice at stretching dough though!)3232932328

I'm thinkin' the shape ,or lack there of, did not effect the taste ?

Looks good to me. I've been mulling over the idea of building a backyard wood fired oven in the fall.Wood-fired refractory brick oven is high on my list for a project, but between the BGE and the Traeger, I really don't need one!

At our house we make a similar dish except we use Naan bread and Brie cheese as the base for whatever we throw on there. Sort of like a grilled cheese for grownups.

I'm assuming it has to be indirect heat, but it also has to be a lot hotter than a smoker-right? So how do you get the heat without the scorch on a BBQ?

So how do you get the heat without the scorch on a BBQ?The Traeger uses an auger to feed wood pellets into a little cup that a "hot rod" ignites to produce the heat. There is a steel plate that acts as a heat diffuser that covers everything under the rack, and a dig. t-stat that controls the temp. It also has a fan to circulate the hot air similar to a convection oven. You can smoke on this grill easier than even a Big Green Egg. Set the stat to "smoke", fill the hopper with your flavor of wood pellets, put the food on the grate, come back when time is up.(making sure to keep the hopper full of pellets). You can also put a pizza stone on the rack, but I put the pie directly on the grates on parchment paper to make it easy to handle.
