I don't know. Anymore slap the word bacon on something and everyone goes nuts. Don't get me wrong I like bacon but most bacon available in grocery stores isn't worth eating. I prefer a stronger tasting gourmet bacon from specialists.

A local specialty store started selling bacon jam. I bought a jar and tried it. I couldn't stand it. The owners asked me about it the next time. When I told them I didn't like it, they agreed. I think the popularity is too many people wanting to follow the crowd.

Of course the bottom line is the guy will some extra money with the new product.

There is a guy here locally, Lothar, that makes sausages. His bacon sausage is most nom-worthy. We get it every month or so at the farmer's market.

That stuff looks tasty but whats new...I've been making my own sausage for years that way...3 lbs of cubed butts and ham to 1 lb of smoked bacon for fat...add spice load depending on whether you want breakfast or other variety of sausage...same with venison...3 lbs of lean venison to 1-1.5lbs of hardwood smoked bacon... grind twice if you like a finer texture meat or leave it once ground for a chewier version...

Okay, I haven't had toe so-called "bacon sausage" yet, but as I slowly but surely convert to the Paleo diet, I have bacon strips and sausage links as standars breakfast items (along with mixed nuts, dates, and fruit juice).
