For this weekly installment, I give you guys the Herculean task of choosing your favorite cut/method of preparation when it comes to to pork.
What is your favorite cut of pork? How do you like it cooked/prepared?
And it's not just BBQ baby back ribs and pulled pork guys... how about sausages, or some of them delectable innards, and dare I mention head cheeses?
My great-grandma's fresh-made scrapple, on butchering day with our Amish neighbors.

BACON closely followed by BUTTS and HAMS slow smoked for12-14 hours and pulled for BBQ, some vinegar and pepper sauce on the side...

The pig is probably the most versatile form of meat in the world. There are literally a million different ways to cook it. Cmon guys, bacon is good but it's extremely overrated. It's just cured and smoked thin sliced pork belly. Who the hell thin slices beautifully marbled meat sandwiched in between perfectly textured layers of fat? You think thick cut bacon is good? How about bacon steak or cubed bacon? Now let's continue with that train of thought and get American palates out of that rut.
I would take a beautifully cooked sausage over bacon any day. You know what, bacon is INGREDIENT, not a dish.
And yes, I am dissing bacon.
Either lechon or bacon.

Nothing beats BACON, eggs, and coffee. I just saw a bacon alarm clock the other day for all you bacon lovers. Waking up to freshly cooked bacon.... Yes please

No pork for me.....unless its by mistake-like in a family made stew that I can't avoid eatting.

I've had the pleasure of eating just about every part of a pig there is in many different ways. The absolute best pork pleasure is the jowl meat of a hog cooked over wood coals. A small, tender, flavorful piece of meat. Add some cracklin's from the skin of a properly blistered hog and your taste buds are in hog heaven. Most go for the tenderloin, but the tenderloin is no comparison. The tenderloin is a 7 on a scale of 10 with the jowl the 10 and nothing in between. This particular cut is always the first bite a knowledgeable and experienced Pitmaster takes after cooking a hog. It is rarely shared with others. When shared it is always with a close friend or offered as a token of respect by the Pitmaster. Frankly, I shouldn't be posting this closely held delicacy.

Does Turkey bacon count? :ugh:I have actually eaten some turkey bacon and sausage that was hard to distinguish from the real thing. But it is a rare thing.
As for the topic at hand, I'm a country boy, so a good thick grilled chop or tenderloin with home-made biscuits and gravy is the best way to eat the other white meat. It was Sunday breakfast weekly when I was a kid.

There is only one type of bacon and that is good bacon. Most bacon today that comes from the grocery store is crap. Give me homemade bacon or bacon from specialty internet source, ala Burger's Smokehouse, Nueske's, Broadbent's, etc.

though I do love a good saint Louis rack slow roasted over charcoal with apple wood smoke thrown in, slathered in home made sauce.
For Italian, I love a good slow roasted porketta.
for Spanish I love chorizo with scrambled eggs or a nice cured pork shoulder thinly sliced.
for Eastern European I love old school head cheese which I haven't been able to find since my paternal grandfather died.

How do you say bacon in Chinese?
Directly translated we call it five layer meat, since there are about five layers in bacon. Sounds much more pleasing in Cantonese haha.
We cut it into slabs and then marinate it with two types of gin, soy based sauces, and whatever else have you and then dry it for a few days.
To cook it you steam it and then cut it into cubes which you can then use as an ingredient.

It's a pig, take out the guts, butt (not smoking butt), and nuts, most everything else is fair game! Although some will probably eat the guts and nuts too!

I have a good recipe for large intestine stir fry, or I can ask my Korean bro for a recipe for large intestine soup. Dericious.

Butterfly pork loins hammered out thin. Drop them in egg n milk and coat with flour. Fry in skillet.
