Thanks Francisp, good video.

I didn't know that you should not season eggs prior to cooking them. Liked how he blended the butter into the eggs.

I've learned a small splash of milk while blending them works too.

At the end he puts a half table spoon of sour cream in them. That was the same Scrambled eggs "secret" that was used by Ralphie in the sopranos!

Its interesting he treats them like a Risoto and keeps them moving. I really enjoy them even though they are a heart attack on the plate.

Absolute best scrambled eggs I've ever had...its actually a Christopher Walken recipe...for every 3 eggs an ounce of whipping cream...and season after they are cooked...and scrambled eggs should be cooked slowly...start with a medium hot skillet and splash the eggs...turn the heat down to low and finish...salt and pepper to taste...lately I've been adding a teaspoon of West Best Hot Pepper Butter on the side...good heat, buttery with a dash of honey...good on sausage too...Thistle Dew Farms out of West Virginia

Tried this, more or less, for breakfast this morning. Didn't have any sour cream, but added the butter and used a spatula instead of a whisk, added the seasoning at the end, cooked them gradually by removing them from the flame periodically. I added a small bit of salsa and some shredded cheddar and ate them on a hot, flour tortilla. Very soft and fluffy! Yum.

you gotta try it with the sour cream when you get a chance. it really is good.

Made the eggs with a splash of milk instead of sour cream this morning... They're good!

While attending the French Culinary Institute we made scrambled eggs in a double-boiler. Slow cooking gives thema creamy texture, but it's too much like baby food, imo.

In restaurants and country clubs I always put cream or sour cream in them. Not only does it enhance the flavor and texture, but the addition of dairy also prevents them from turning green while on the buffet line!

Now, I cook my eggs in olive oil.
