Sort of like the warrior workout of this year, I propose we show off some good living dinner.
Pics are required so here's mine:
Salmon hand crusted in chipotle bread crumbs (baked until firm outside/tender inside) with fresh peppers, chives and a dash of spicy mustard.
About 12 grams of fat, 30 grams of protein under 600 calories (by my math)

Well, crap. I just polished off a big grassfed ribeye with a pile of asparagus and peppers all cooked in butter and oven-finished. Farm-made sour cream on the side. Dessert was fresh organic blueberries and organic cream. Woulda taken a pic if I saw this first. I'll get on the ball.

Day 2
Artisan lettuce, Chives, sliced cherry tomatoes, pinch of cheese and sliced peppers over a few blue corn chips. All topped with Chicken- taco seasoned (1/4 pack to avoid excess sodium).

Dessert was 90% dark chocolate sandwiching mascarpone cheese. Everything grassfed, organic, etc. I really will start pictures, I swear!

I did a lean steak round wrapped in turkey bacon with garden greens and tomatoe juice. Cooked it too long, wasn't picture worthy....:dunno:

I eat something awesome pretty much every day, but finally thought to take a (crappy) picture.
Grass-fed New York Strip steak cooked in grass-fed butter, sauteed organic broccoli and greens with a hefty side of farm-fresh sour cream.
The Benchmade is there to class things up a bit; it doesn't get used for food, normally.

I'm finishing up 3# of thin sliced asada, baked potatoes, sautéed mushrooms/onions/broccoli, and had to top it off with baked beans. I can't eat meat without them. It's a good meal since today I carried drywall all day up to a third floor at USC. Kicked my a$$. I almost was concidering running when I got home, but all I could think about was eating like a caveman.

Tonight was a New Zealand lamb shoulder chop with broccoli and green veggies sauteed in butter, covered with cracked pepper. Generous side of farm-fresh sour cream and twelve 180-grain JHPs.
Dessert was a nice hunk of Kerrygold Dubliner Irish cheese (one of the best grocery-store cheeses out there, IMO).

I pulled a "Mr Anthony" and didn't take pics tonight but it was fresh cut and grilled chicken with bell peppers, locally grown corn, red onions and cracked pepper.

Surf and turf.
Charcoal grilled dry aged rib eye (home grown cow). Scallops in white wine cream sauce. steamed Brussels sprouts with a little butter, salt and a lot of course ground black pepper. Fresh avocado and tomato slices with chopped green onions, olive oil, salt, pepper and a little garlic.

Not really dinner, but here's my Superbowl dish I'm taking over today, and it's a doozy.
I got my hands on some kangaroo meat and made spicy kangaroo meatballs and then topped them with a homemade ancho chile-infused sour cream based sauce. Pretty dang good, and if that isn't fusion cooking I don't know what is.

Those kangaroo meatballs look interesting. Never ate a marsupial, would like to some day.
Today I made a sausage and chicken Alfredo with semolina shells. With a Knob Creek searved neat (appetizer) and because sausage and chicken goes well with apples, a nice crisp hard cider to wash it down.
Not really healthy. But I needed comfort food tonight.

I was all set to post up dinner tonight: slow simmered BBQ Chicken breast in a jumbo bell pepper, with corn, chives and grilled pineapple.
But the damn thing fell over in the oven dish and spilled its insides all over..:angry:
It still tasted great but wasn't much to look at.

I have Taco Soup (essentially a Mexican chili) in the crock pot.
One of the first dinners my wife made for me was abondigos, I thought she was too good to be true, then she made me taco soup. I proposed not long after.
Not one for soup and I do not care for chili. But that looks good Doc. I'll ask her to make it for me again.

okay as promised...
Here is HOME made (moms recipe) whole wheat thin crust pizza, spicey turkey sausage on home made sauce, dried and crushed red peppers, black pitted olives, bell peppers and a light bit of cheese.
Salad ice Iceberg leaves with chives, peppers (I like if you haven't noticed) with white tuna in water, tomatoes and sprinkle of cheese and zesty mustard.
Sadly Verboten-Frau exercised her veto to me cutting the pizza with the Bark River knife....:dunno:

Salmon laid on aluminum foil. Smeared with apple jelly , pinches of red pepper , salt and garlic and onion powder! Cook till done on grill. Side salad and grilled asparagus. (If you have the time........ Boil aspargus, when limp......... dip in egg and press in Italian bread crumbs and fry. You may add some Parmesan / Romano cheese to the mix. of course grated and mixed well with bread crumbs so its in the mix. )
Nothing beats seafood and sides with a proper veneer. The apple jelly dances in your mouth and the red pepper adds just a slight tingle to the mix. Do not douse it like your pizza slice.

We spoiled ourselves on fresh seafood at MotoGP in Monterey the last couple year... too bad I didn't have any jelly to try your recipe at the time.

8 hours in an old weber kettle with some occasional apple wood smoke.

Tonight, I think we are going with a cowboy chili (chunks of beef, instead of ground beef), using beer instead of water.
I do a corned beef & cabbage with Guinness and a bit of malt vinegar instead of water. Good stuff.

One of my all time favorite cheap and easy meals. Extra lean ground beef, with a little cumin, paprika, cayenne, chilly powder, garlic, black pepper, salt. Avocado with a little olive oil, tillimook cheddar cheese and sour cream, chopped green onions, some la Victoria and a bit of lime on a corn tortilla. About 5/10 minutes and enjoy.

I love to cook. My wife and I cook every night and wouldn't have it any other way.
Tonight I made a teriyaki sesame stir fry with filet mignon cut into small pieces with carrot and broccoli cooked in the wok with fresh garlic, teriyaki sauce, sesame oil, sesame seeds, and soy sauce then served over white rice. My 3 year old loves it!

I've been meaning to try the marmalade rub since the first time you mentioned it.
Here's another one to try: Black currant preserves and red wine. Makes an awesome glaze for lean meat when the mood is a little sweet. It is also good with chillies to kick it up a notch.

Sorry I didn't take pictures, but last week I cooked for 70 people for my kids school's accreditation counsel banquet.
Started with fresh bruschetta and roasted garlic served with an apple/mango champagne punch followed by portabella mushroom soup with a main course of grilled Hoisen and bourbon glazed pork tenderloin and parmesan chicken, roasted new potatoes, green beans and yeast rolls.

I remembered he'd posted something about baking a steak, had to pm him 'cause I didn't find it again. I'll have to pm you the link, but it's basically this:
Bae-ked Steak
* 1.5" steak, coat in oil, salt & pepper
* Put dry cast iron skillet in oven, set oven for 500 deg. (or "Broil" as GinaC informs me most ovens recognize as 500)
* When oven reaches 500, pull skillet, place on burner on high for 5min
* Place steak in the middle of skillet, flip at 30 sec
* Skillet & steak into oven for 2min each side
* Remove steak from skillet, cover with foil for 2min
* Attack w edc knife and teeth
Really helpful hint: have your exhaust fan on high or just pull the damn battery from your smoke alarm.
I'm definitely going to experiment with some things; butter instead of oil, garlic instead of pepper, etc.

Close to my favorite, use peanut oil (higher flash point), LOTS of Kosher salt, a little garlic powder, which will get somewhat toasted in the REALLY hot skillet, and continue as above.
I preheat the cast iron skillet on the barbecue, gas or charcoal, and use it instead of the oven. Same cooking with the addition of smoke..

Vietnamese Beef Pho, not Paleo but damn good. Stock Bones, Brisket, roasted Onions, roasted Ginger, Star Anise and Cinnamon sticks. Pour boiling broth over fresh pad thai noodles, green onions, chopped brisket and paper thin beef filet. Serve with bean sprouts, Cilantro, Thai Basil, Jalapenos, Lime wedges and assorted sauces. Enjoy!

My first primal meal from the grill. Swiss chard, spinach and garlic sauted in Spanish EVOL and a really nice 8oz pork chop finished in a rub made with paprika, garlic, sea salt, fennel, black pepper, and red pepper flakes.
Served on our "everyday white" from Bed Bath and Beyond, with excellent Zwilling J.A. Henckels dinnerware/steak knives from Germany.

Tonight is baked chicken smothered in "pumpkin gravy".
Pumkin gravy is sauted white mushrooms, yellow onions, garlic, and jalapeños....added to pumpkin purée thinned with coconut milk.
It is a little monochromatic, but it tastes amazing!

Deliscious. Honestly it tastes a heck of a lot like beef.
Thisntrip I also had that I remember. Impala burgers. Mountain reedbuck cheese burgers. Steaks of eland wildebeast both black and blue Kayla kudu a sausage from waterbuck. Barre east and a few other thinthings what made it special was the location and the company of a good friend and his son.

That is quite a breakfast, I eat avocados at least once a day. And at breakfast with an omelet is my favorite.

My parents and those other grow ups in life always said breakfast is the most important meal of the day. Well, I didn't exactly internalize that until I was in my 30s, concerned about being fit, and eating grain-free.
I just never saw the benefit of breakfast when it consisted of cereal, pop-tarts, or other junk grain/sugar/HFCS garbage, mainly because there wasn't one.
Now, for sure, breakfast is the best meal of the day.

Summer squash, onion, parsley seared with garbonzos (not exactly paleo, I know) with a bit of pepper and Parmesan, a few almonds and a touch of blue berry

1 Jim Beam Choice and Coke, 2 slices of Godfathers Combo Pizza, while watching 3-Gun Nation with my two dogs and no one else in my house and followed it with a Klondike Bar.
This was my reward for kicking my own ass this week and losing yet another pound (ish)
Back to the salad and fruit and wholesome stuff next week, and more ass kicking.:biggrin:

I FORGOT A PICTURE FROM LAST NIGHT!
After a good, very pretty, long morning hike, several like-minded friends gathered at my buddy's house for a BBQ late yesterday afternoon. Good bourbon, etc., but my friend who is very serious about his BBQ made Pig-Wrapped Pig-Stuffed Pig. Pork tenderloin, stuffed with sausage, all wrapped in a bacon weave, then smoked. Freaking amazing. We're doing this again soon, so I'll definitely get a pic of that one.
The host also had a couple new pistols: Beretta 92FS, and the blacked-out SA 1911 with the Punisher skull grips.

This one is super easy. I keep a bag of frozen veggies from Birds Eye, no additives or sugars. Throw in some sea salt, coconut milk, curry powder and garlic.

Gina whipped this up using grass fed ground beef as the "crust" with all the veggies coming from family, neighbors & the Fresh Market. So friggin' good for dinner the first night, terrific breakfast for many days after.

Lunch today. (Actually several days in a row, but I forgot to snap a picture.)
Organic baby spinach salad loaded with bacon, sun dried tomato turkey, sliced almonds, pecans, blueberries, and topped with freshly ground black pepper and a bit of ground cayenne for zing.
Very paleo, very recommended! Yum!

Dinner last night: Grilled Italian Chicken Breast
The prior evening my son added Italian dressing to chicken breast in a large zip lock bag and stowed it in the refrigerator until following evening.
My son fired up the grill when we got home as I prepped the chicken and cooking containers. The XO was doing XO stuff so we had command of the kitchen.

I formed a bowl using foil laid over a plate and added some dry spices and some Italian dressing.
I then arranged two chicken breasts and add more dressing and spices, then formed the closure of the foil by pinching the foil to seal, leaving some room for venting.
I grabbed an adult beverage and the chicken and we moved out to the grilling area. My son departed for the evening and requested I save him some for later.
I placed the foil bowls over even heat, enjoying the aroma of our next meal as it simmers and the adult beverage, along with a peaceful country evening.

I soon saw the rolling simmer of the dressing pushing out a little steam as last light faded.
This was not a tactical exercise however, I did chose to remain in low signature mode and operated without the use of the outside light. Every so often I would illuminate the grill with my Surefire G2 to get a visual on the chicken.

Checking my timepiece I noted the luminous hands shown 15 minutes had past, it was time to flip the chicken and apply a bit more spices and pinch the foil back down.
Enjoying the evening sounds with the low drone of a tobacco barn dryer off in the distance I checked the time again, another 15 minutes had past, it was time to check for pink. I retrieved my large voyager and sliced into each of the chicken breast to ensure they were properly done.
Finding no pink I then went into the final phase of the grilling and placed them all on the grill to add some stripes.

It fun to see out diets change over time.....
Since I started this thread, I've gone from organic and no fried foods to full paleo and haven't been fitter.

The crust was actually pretty good. I think I could cook it a touch longer, and maybe add some garlic salt to it. I'll have to play around with it ;)
The crust is shredded (skinned) eggplant, almond flour, flaxmeal, and an egg. Salt and pepper to taste. I buy the almond flour in bulk...
